What We Do
Alef Sausage was founded by Chef Alec Mikhaylov in 2000. He wanted to create salami similar to the traditional, time-honored family recipes he remembered from Ukraine.
Chef Alec started crafting different charcuterie in his Deli store, which became famous nationwide and in Canada. In 2005 Alef Sausage outgrew the small USDA plant within its gourmet store and opened a 16,000 square foot facility. The once small family operation that made 200 pounds of charcuterie a day was now doing so much business that Chef Alec’s daughter, Marina, left her job as a registered nurse to work for the family business.
Today she is Alef’s president overseeing the production of more than 50 varieties of charcuterie as well as marketing and new product development at the Company’s plant, which was expanded to 80,000 and produces 25,000 pounds of product daily. We craft salami, summer sausage, bologna, hot dogs, bresaola, beef sticks.
Alef Sausage became WBE certified in 2021. Our Bologna won best Bologna in the prestigious Charcuterie Masters competition in 2019 and 2020. Wagyu Beef Salami became best in its category in 2020, and Bresaola received Silver Sofi Award 2021. Uncured Wagyu Harissa became finalist of the Good Food Award 2022. Wagyu Beef Salami won an Outstanding SOFI Classic Award 2024.

Wagyu Beef Charcuterie is as a bite crafted by two traditions: luxurious Japanese beef and Old-World sausage making.
Wagyu Salami:
We use American wagyu beef from Texas with 100% full blood Wagyu genetics from the Kobe region of Japan.
Each batch is 100% traceable, antibiotics free, hormones free, fed vegetable diet, grown naturally, nitrates free, nitrites free, MSG free, gluten free, milk free, has no artificial flavors, minimally processed.
